Here's my mom's version of the spanish-influenced dish.


ingredients

1.5 lbs of extra lean coarsely ground beef
1 medium onion
1 tbsp olive oil
2 chopped garlic cloves
1 large tomato
1 cup of water
1 40g package of knorr tamarind soup base
3 cups of chopped zucchini

directions

>> prep veggies
>> saute garlic, onions, and tomato in olive oil until tomato is wilted
>> add and cook beef until brown
>> add tamarind soup base
>> add water
>> cover until it comes to a boil
>> add zucchini until cooked

>> serves approximately 4
